Jack Mackerel vs. Salmon

I love Jack Mackerel.  It is half the price of Salmon with double the nutrition per serving.  Here’s a video for you on how to prepare a simple recipe and what to expect when you open the can.  It’s not very clear in the video but the ingredients are:

1 Can Jack Mackerel–$1.32

1 Sleeve Saltine Crackers $.25

2 Eggs–$.16

This feeds four people for $1.73 (or $.44 a serving!) and is loaded with protein.

I cannot tell you how happy I was to read your post on the Nester’s blog! My husband and I started Dave Ramsey a little over six years ago. We went HARD – all out! We sold everything that wasn’t nailed down, cut yards, ebay-ed, had garage sales, made every gift we gave, ceased to eat out…when we heard Dave announce the competition you guys participated in, we were too late in our journey to enter in, but were still HUGELY encouraged to hear each of your testimonies! I remember like it was yesterday – we were painting our downstairs bathroom and we’d listen to Dave on the computer while we painted. Hearing the ways each competitor was cutting debt motivated us – thrilled us! WHAT HUGE encouragements all your testimonies were!!! We’re still Dave fanatics and pay cash for everything! Anyway – I just wanted to hop over and leave you a comment to thank you for the ways you unknowingly were encouraging us in our own journey! I’m subscribing and can’t wait to read more! (And I’m buying your book today!) And your kitchen – you’re re-doing!? How wonderful!

Hi Angela! Your post made me think of Grandma. Grandma used to make Mackeral patties. She loved them for the exact same reasons you stated. I usually make them with tuna. I haven’t been able to get over the bones and the skin yet. 🙂 Grandma’s recipe calls for a a couple of pieces of whole wheat bread that you just shred with your fingers. I find it’s a great way to use up the heals that nobody likes to eat at our house. Anyway, just another filler idea to use instead of crackers.

I’m definitely going to try this. I have looked for it before and didn’t see mackerel on the shelf, but I’ll check again now that I know what the can looks like 🙂 I probably just looked right over it last time.

After going gluten free last year I found a great substitution for the crackers in these – mashed potatoes! I just use any leftover that I have on hand. I then sprinkle some corn meal on top of them to give them a good crust while cooking. (It helps them stick together even better.) Oh, also these bake up wonderfully if you have the oven going already for something else. I think that they take about 25min at 350deg.
