Whole Wheat Biscuit Mix

Use this recipe in the place of any storebought boxed biscuit mix, such as bisquick.  It makes biscuits, pancakes, waffles,  cookies, impossible pie (both sweet and savory), scones, muffins, and more! 

Whole Wheat Biscuit Mix

3 cups whole wheat flour

3 cups unbleached flour

6 Tablespoons baking powder

3 Tablespoons sugar

1 teaspoon salt

1 cup of cold butter (Trans fat free shortening or lard can also be used)

Mix all the dry ingredients together well and cut in the butter until it is in pea sized amounts.  For lighter, more layered style biscuits, it’s best not to cut the butter too small.  Store in a tightly covered container (or baggie) in the refrigerator until ready to use.  For tons of recipes try here.

Basic biscuits

For six biscuits:

  • 1 cup Mix
  • 1/4 to 1/3 cup water

For 12 biscuits

  • 2 cups Mix
  • 1/2 to 2/3 cup water

    Thank you so much!! How long does this usually stay fresh? We grind our own wheat too and I have noticed it can still go bad in fridge over time. Do you store this in the freezer for freshness?

    Is it possible to make this bread in a stand mixer? I am a NEWBIE to the baking world, and LOVE the idea, but struggle with the logistics. We do not have a breadmaker, and do not have room in our budget to buy one (I’ve been scouting garage sales and thrift shops with no luck).

      Yes, Renee. You can make bread in a stand mixer, but you’ll need to take it out before all the flour is added and hand finish (knead) it. Most stand mixers (besides the Kitchen Aid) aren’t strong enough to knead the dough. If you’d rather not knead the dough, check out the book Healthy Bread in 5 Minutes a Day. It’s all made by hand and uses a super wet teachnique that builds gluten without kneading.
