Strawberry Spinach Salad

Here’s my lunch today–and it was even tastier than it looks.  And talk about healthy!

Strawberry Spinach Salad–Serves 1

2 cups spinach leaves

4 oz sliced fresh strawberries

4 oz grilled chicken breast, sliced (I throw mine on the Foreman grill)

12 almonds, chopped, and toasted in the microwave on high for 1 minute

2 Tablespoons (1 oz) Raspberry Walnut Vinaigrette Dressing

Layer all ingredients on a plate and eat right away.

    It looks so good, though…can’t imagine how really great it was! I love field greens with a little feta cheese, raisins, olives, walnuts and balsamic vinaigrette. Ooooh. I wish I had the ingredients in the house today. Gotta go shopping ! 🙂

    Angela! This is amazing!!! I started Fit Yummy Mummy because of what you’ve said about it and how much you’ve changed. Then I remembered this recipe and tried it the other day. We don’t have a raspberry walnut vinegarette equivalent here in Australia so I used white balsamic. I couldn’t believe how delicious it was! I never imagined the flavours would go together like that and I was blown away! Thank you!!!

      I’m so glad you tried it and like it. I feel like I’m eating dinner in a spa cafe–so luxurious. And quite filling too. And it helps me burn fat. I hope you love Fit Yummy Mummy as much as I do too. I’m going gung ho on her Summer Transformation Challenge and am finally getting deeper progress. My last hangup was giving up milk and wheat temporarily but it really made the difference.
