Fresh Apple Cake for Breakfast

The cake pictured was made with pears instead of apples.  The original recipe called for 1 1/2 cups of oil!  2 cups of sugar and white flour.  With all the goodness of the fresh fruit, I couldn’t bear to do the recipe as written.  I removed a full cup of oil and added an extra cup of fruit.  Then with the added sweetness from the extra fruit, I removed a half cup of sugar and replaced the white flour with whole wheat.  It was delicious and healthy enough for me to serve for breakfast.  Here’s the recipe:

Mix 1/2 cup oil (any kind you feel is healthiest), 3 eggs, 1 tsp vanilla extract and 1 1/2 cups sugar with an electric mixer. 

Add 1 teaspoon salt, 1 1/2 teaspoons baking soda, 1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, 1/2 teaspoon cloves and 3 cups of whole wheat flour.

Fold in 4 cups of chopped pears or apples.  Pour into a greased and floured bundt pan.  Bake at 350 for 1 hour.

    Thast is a good thought Angela, what oils are healthier for baking. I use a lot of olive oil in cooking, but not in baking. What kinds do you recommend? Thanks!

    Andrea,
    I actually used butter in this one. You come out with a little less fat this way because when you measure as a solid there is 4/5 less than when it is melted.

    I use canola oil too in baking since it heats up better than olive oil. I use olive oil in my bread, but there is so little of it that I think it is well insulated from overheating.

    It’s been a while since I looked up about all the different oils. Olive oil might lend an interesting flavor and coconut oil will too, but maybe in a good way?

    Thanks for this recipe. I made this a couple of days ago and it turned out AWESOME! I’ve tried a couple of my old recipes that called for regular flour but some of them just don’t transfer to Whole Wheat Flour well. I didn’t have cloves and added a little brown sugar. I used EVOO and had to add about 1/4 cup because it was a little dry. I cut the apple very small because my husband always complains about fruit in bread and he ate two pieces before I told him about the apples and he hadn’t noticed! 😀 Thanks again!
