33 Lunch Ideas

My family is big, sort of. When I’m in public people stare, but when I’m at homeschool coop I can say I “only” have 5 children. Most of them have 7-12. The point is, leftovers are becoming scarce. Leftovers used to be my lunch stand by, just warm it up and eat. Lately, I’ve been cooking a brand new meal for lunch. Now that our homeschool has started, it needs to be fast and filling. Here are 33 ideas for lunches that I can make quickly or start the night before in the slow cooker. Do you have any ideas to add? Please add your favorite lunch as a comment.

1 Egg Sandwiches with fried egg, bacon, and cheese
2 Egg Salad Sandwiches on bread, pitas, or buns
3 Egg Burritos plain or with sausage

    I also like sliced fruit, steamed peas, yogurt with granola and a slice of fresh bread as a quick lunch. We also mix sweet potato purée or white bean purée into the sauce for mac n cheese to add some nutritional value, and my kids like steamed peas mixed into their macaroni. For quesadillas we add chopped spinach leaves with the cheese and black beans, and I’ll spread white bean purée or hummus on the bottom of the tortilla before adding the other ingredients.

    We usually have these ideas for dinner, but they’re pretty quick so they would work equally well for lunch I think – broccoli cheese soup & baked potatoes, sweet potato and black bean quesadillas or burritos (I usually bake the sweet potatoes in the crockpot while we’re at work). Good luck!!

    I like to bring butterbeans. I know that sounds strange but I love them with a few pieces of ham or pork and some vinegar. As you can tell, I have a private office at work. My co-workers might not enjoy the aroma but they are low fat, high fiber, very inexpensive and give me energy midday.

    We have 8 children,seven thet eat solids.We take a box of pasta-1lb. one can of inexpensive spaghetti sauce(I can usually pick that up for about $.69 about 3 times a year and I just stock up)Pour pasta into a greased casserole dish,pour in the sauce,add a can of water,some garlic salt,stir,cover and bake @ 350 for 45 min(while you are doing something else)Remove foil,sprinkle some cheese on top,return to oven and bake til melted.This feeds all of mine.Enjoy!!
