Turkey and Bean Lunch Taquitos

Turkey and Bean Lunch Taquitos

Ingredients

  • 20 6" tortillas
  • 8 oz shredded cheese
  • 1 can (15 oz) refried beans
  • 1 pkg (20 oz) 93% lean ground turkey
  • 2 Tbs taco seasoning (I used homemade)

Instructions

  1. Preheat oven to 400 degrees.
  2. Brown ground turkey with taco seasoning until cooked through. Stir in refried beans.
  3. Place a small amount of bean mixture on the edge of each tortilla. Top with cheese. Roll up tightly and place seam side down on a baking sheet.
  4. Bake for 15 minutes or until golden brown and crunchy.

    We make something like this and I think the refried beans really help make it easier to make! Plus people who say they don’t like refried beans will eat them in this. I make homemade refried beans from dry beans (a HUGE pot) and then I freeze them in leftover 24 ounce cottage cheese containers. Homemade refried beans are so cheap and so yummy (and SO useful for a really fast meal.)

      Liz, your homemade beans sound yummy. I used to make them in my slow cooker, but haven’t done it for awhile. You’ve motivated me to do it again.

    Have you ever tried freezing these? They sound like something my husband would enjoy in his work lunches, but that will only work if I can freeze and thaw them.

      Kris, Definitely. They freeze and thaw perfectly. They also work with low carb or gluten free tortillas and are ok with or without cheese since the beans hold everything together.

    It’s the best little cookbook. My mom got it for me and one for my sister back in the 80’s. After she died I got her copy for my eldest daughter for some day. I remember that it was $5 back then. Anyway, we don’t use every recipe in there, but there a good number that we use over and over again. We have lots of enchiladas for example. (Enchilada Elena or Creamy Chicken Enchiladas…yum!) (Except with almost 11 kids now I don’t roll my tortillas…I just lie them flat!) Anyway, I find Mexican food to be some of the most frugal. I made soft tacos last summer for over 300 people. (We used a lot of my husband’s homemade salsa so that helped a lot!)
