Strawberry Breakfast Cookies

If you ever have a busy morning and wish there were somthing nutritious to grab and eat in the car on your way to wherever….these are for you.  They are mildly sweet and have a good amount of fiber and healthy fat to keep you satisfied.  These hold together well, even when made with gluten free ingredients and are a nice non-crumbly breakfast to go.

Strawberry Breakfast Cookies

1/4 cup coconut oil, melted

1/4 cup applesauce

1/2 cup honey

1/2 cup milk (almond milk works fine)

2 eggs

1 tsp vanilla extract

1 1/2 cups rolled oats

3/4 cup whole grain flour (almond meal also works)

1/4 cup flax meal

1/2 cup craisins

1/2 cup diced strawberries

1/4 cup sunflower seeds

1/2 tsp cinnamon

Preheat oven to 350 degrees.

Stir together melted coconut oil and honey.  Beat in eggs, vanilla, applesauce and milk.

Stir in remaining ingredients

Use a 1/4 cup to scoop dough onto parchment or silpat lined baking sheets. Use a spatula to smooth them into round cookie shapes. Bake for 20 minutes, or until golden brown.

The next morning I drizzled them with a little melted chocolate hoping the kids would eat them better.  They were pretty excited about it, but I liked them better plain.

      Laura, They made 13 cookies. I ate 1 and my husband had 2. I eat every 3 hours. If I was waiting longer for the next meal, I’d want 2.

    I am anxious to try your recipe. I have been wanting to make a breakfast cookie to use as favors for a Rehearsal Dinner. Seems to me, the members of the wedding party fail to eat much on the day of the wedding, due to the many preparations. This might be perfect for them to nibble on to keep blood sugars stable. Our son is marrying soon and his fiance favors strawberries, so I am going to give this cookie a taste test. By the way, to save money/ limit costs, we are making many things ourselves (invitations, decorations, some food) and borrowing items from friends for the multitude of modern wedding events that are popular today.

      Congratulations on your son’s wedding! These are pretty little cookies for breakfast. They have a “healthy taste” but I thought it was really pleasant. If the wedding party sees them and expects it to taste like a dessert cookie, it will be disappointing.
