Homemade Chicken Nuggets

It’s hard to believe Grocery Shrink Plus is already in it’s 5th week!  If you haven’t signed up yet you are missing out.  We’ve been trying all sorts of new recipes and tecniques.  It’s so much fun!  And I’m really loving the facebook group.  It’s so fun to see the photos of everyone’s family and food.  The ladies are so encouraging!  I love to see little notes like this one:

With Grocery Shrink Plus, everything is laid out for you.  I hope this is freeing.  Freeing enough that you can relax and let your kids help you in the kitchen.  The day we made chicken nuggets, little Brandon stopped in to help.  I was surprised how good at it he was!

Chicken Nuggets
Ingredients Servings
2 4 8 12
Boneless Skinless Chicken Breasts (or tenderloins) ½ lb 1 lb 2 lbs 3 lbs
Bread Crumbs or crushed cornflakes 1 cup 2 cups 4 cups 6 cups
Parmesan Cheese 2 Tbs ¼ cup 1/2 cup ¾ cup
Salt ¼ tsp ½ tsp 1 tsp 1 ½ tsp
Onion powder 1/8 tsp ¼ tsp ½ tsp ½ tsp
Garlic powder 1/8 tsp ¼ tsp ½ tsp ½ tsp
Unbleached flour or brown rice flour 2 Tbs ¼ cup ½ cup ¾ cup
Eggs, beaten 1 2 3 4

Preheat oven to 375  degrees. Cut chicken into bite size pieces.  Dip in flour.  Then dip in beaten egg and again in cornflake/breadcrumb mixture.

Place dipped chicken on a greased baking sheet. Bake for 12-15 minutes or until golden brown.  Serve with your favorite dipping sauce.

      Linda, I’m just me :). No makeup–spray paint in hand. Or else those tree clippers, lol. So glad to find a friend next door. This is the best neighborhood ever!
